JINYA Holdings is expanding beyond ramen and robata with the launch of Mikan bakery & more, a Japanese-style bakery and beverage concept scheduled to launch this summer in Encino, California.
The restaurant will open at 17237 Ventura Blvd., and feature recipes inspired by Tokyo-based Boulangerie MAISON NOBU. JINYA founder and CEO Tomo Takahashi recruited Japanese baker Aya Asaumi to oversee the menu.
Mikan bakery & more offers artisan pastries, Japanese curry bread, egg and fruit sandwiches, shio pan (salt bread), cube-shaped shokupan and European-style breads such as baguettes and focaccia. Beverages will include matcha and hojicha from Uji, Kyoto, specialty coffee, freshly pressed mikan juice and citrus-based drinks, including the signature Mikan Matcha Latte made with house-made mikan purée.
All food and beverages will be made in-house.
"There are still very few places in the U.S. where guests can experience authentic Japanese bakery bread," Takahashi said in a press release.
"By partnering with renowned bakers from Japan, we're bringing that authentic experience and level of craftsmanship directly to Los Angeles."
The bakery will also sell branded merchandise, including apparel, mugs, tote bags and Mikan Friends collectibles.
