Dillas Quesadillas to open 1st nontraditional location

Dillas Quesadillas will launch its first nontraditional location inside Brookshire Grocery Arena in Bossier City, Louisiana.

Operated by Pete John of Primeaux Restaurant Group, the concession stand will open on Aug. 27, during a Jason Aldean concert. The opening at 2000 Brookshire Arena Dr., will mark John's sixth Dillas location and the brand's first outside a traditional restaurant setting.

The operation is Dillas' first in nearly two years, following a period of investment in operational systems, menu simplification and technology as the brand prepares for its next phase of expansion.

Brookshire Grocery Arena is a 270,000-square-foot multipurpose venue that hosts concerts, sporting events, family shows and community events. Dillas will be one of six food vendors at the arena, offering a streamlined menu designed for quick service.

The concession stand gives Dillas the opportunity to expand its franchise model into nontraditional venues as it works toward a goal of 50 locations by 2028.

"We've spent the past couple of years strengthening the foundation of the business, and this opening shows there are new ways to bring the Dillas experience to guests while giving franchise partners another path for growth as we build toward our goal of 50 locations by 2028," Kyle Gordon, co-founder and CEO of Dillas Quesadillas, said in a press release.

The company also has invested in operational technology, recently adding the AI-powered kitchen prep management tool PreciTaste and weekly AI-based operational reporting tools across its system.

Headquartered in Plano, Texas, Dillas Quesadillas began franchising in 2018.
