Salad sales up, reveals new report

A new Salad Keynote report reveals 46 percent of consumers are eating more green salads than a year ago, and restaurateurs are seeing the increased sales.
The report compiled by Datassential, which examines the perceptions and preferences of consumers and operators, states 42 percent of operators said have seen more salad movement in the last year, according to a press release.
