The Flying Biscuit has signed a franchise agreement with Viren Patel to open a restaurant in Greenville, North Carolina. Site selection is underway, with an opening date to be announced after a lease is signed.

Patel operated five restaurant franchise locations in Canada over eight years before moving to the United States in 2015 and investing in gas station and lodging businesses. Greenville will be the Atlanta-based breakfast and brunch chain's first location in eastern North Carolina. The company has 44 open restaurants and 12 in development across seven states.

"North Carolina has become one of our deeper states, and Greenville is exactly the kind of market we want next: A university, a hospital system and a lot of people who are up early," Andrew Scherzer, partner and director of franchise development for Flying Biscuit, said in a press release.

Recent development activity includes a fourth North Carolina café planned for North Raleigh, targeted to open in the first quarter of 2027, and a two-restaurant development agreement for Palm Beach County, Florida. The brand also signed its first Missouri lease in St. Charles in August, as part of a three-restaurant agreement.
