The Flying Biscuit Café has signed a multi-unit development agreement to open its first two restaurants in Palm Beach County, Florida.

Franchisee Matt Thomas is seeking the first site in the region. In a press release, Thomas said Palm Beach County's mix of young professionals, families and retirees makes it an ideal market. He also cited the area's year-round weather as an opportunity for patio seating.

Thomas previously owned and operated more than 10 sandwich-franchise locations, according to Flying Biscuit Franchising partner and Director of Franchise Development Andrew Scherzer.

"His experience as a multi-unit franchisee gives him a strong understanding of restaurant operations, team leadership and what it takes to run and grow a business," Scherzer said in a press release.

The Atlanta-based Flying Biscuit Café has 43 locations open and 13 in development across Alabama, Florida, Georgia, North Carolina, South Carolina and Texas. The company is seeking franchisees to support expansion across the Southeast and other markets.
