Bonrue Bakery making Utah County debut

Savory-backed Bonrue Bakery will make its Utah County debut next week at 1545 N. Canyon Road in Provo, marking the first of three planned locations along the Wasatch Front.

Located near Brigham Young University's LaVell Edwards Stadium, the European-style bakery will celebrate its grand opening at 9 a.m. with a ribbon-cutting ceremony, music, and an appearance by BYU mascot Cosmo. The first 200 guests will receive a limited-edition Bonrue tote bag, a keychain and complimentary pastry samples, according to a press release.

The Provo store is part of a broader expansion strategy following an investment in 2025 by private equity firm Savory Fund. Bonrue plans to open two additional Utah county sites in Orem and Spanish Fork by the end of 2026, supported by a new central baking kitchen in Springville.

Founded in 2021 by Las Vegas restaurant veterans Chris Connors, Li Hsun Sun, and the late Chris Herrin, Bonrue originally operated under the name Farmstead before rebranding. The concept specializes in scratch-made European pastries — including its signature kouign amann and buttery croissants — alongside specialty coffee, breakfast dishes, sandwiches, and salads.

To accommodate high-traffic periods common in college towns, the brand utilizes an operational model capable of serving more than 100 guests in a 10-minute window.

"Provo is an exciting next chapter for Bonrue because it gives us the opportunity to bring what we've built in southern Utah to a new community and become part of the daily rhythm here," Chris Connors, co-founder of Bonrue Bakery, said in the release.

The fast-casual concept operates multiple locations in Washington County and plans to add more than 10 locations across the region over the next year.
