Potbelly opening 1st unit in Mankato, Minnesota
Potbelly Sandwich is opening Thursday in Mankato, Minnesota. The shop, which features a drive-thru, is located at 1859 Madison Ave., in front of Walmart at the heavily traveled corner of Highway 22 and Madison Ave., according to a company press release.
Paul Goldammer, the new sandwich shop's owner, is an experienced restaurateur, who owns several Potbelly Sandwich Shops in the region and runs the Mankato location with the help of his longtime friend, Lance O'Hara.
“Mankato is the perfect fit for a neighborhood shop like Potbelly, and we can't wait to give folks the chance to fall in love with our warm, toasty sandwiches," Goldammer said. "I know our local vibe will appeal to university students, families and people running errands at surrounding shops, and I look forward to turning Mankato residents into lifelong Potbelly fans."
In addition to the Mankato shop, Goldammer is Potbelly's fastest-growing franchisee, with shops in Des Moines, Ames and Sioux Falls, Chris Birkinshaw, senior director of domestic franchising for Potbelly Sandwich Shop, said in the release.
"Paul has blown us all away with his commitment to opening Potbelly shops across the Midwest," Birkinshaw said. "He's shown that he knows exactly what it takes to make Potbelly the new favorite for lunch in each new neighborhood where he opens, and as a seasoned owner and operator, Paul is a true ambassador for the Potbelly brand."
Since opening its first shop in Chicago in 1977, Potbelly has expanded to neighborhoods across the country with more than 425 company-owned shops in the United States. Additionally, Potbelly franchisees operate more than 50 shops domestically, in Canada, the Middle East and the United Kingdom.
