Pei Wei, which has more than 200 units in 28 states, is on a mission to grow across the country. To do that, the chain is not only flexing its culinary muscles with new menu items and flavors, but also modernizing its design and image with a focus on freshness and healthy food, said CMO Clay Dover, who discussed why the company is rebranding during an interview with Cherryh Cansler, editor of FastCasual.

"What we are seeing, is that it's appealing to a younger demo, people who are a little more adventurous," said Dover. "They want bold flavors; they are willing to try things they may not have had in the past."
