Mimi's Café is launching a new prototype restaurant designed around the Parisian experience, however, the casual dining brand is now trying its hand at fast casual with Mimi's; the "Café" is gone, according to the L.A. Times.
Mimi's is merging fast casual with casual dining and opens next week in a former Mimi's Café location at a shopping center in Santa Clarita with bakery section, a cold case with to-go options, a bistro and coffee bar, a loaded bar, indoor garden seating, a room styled after a winery and the standard cafe area.
"We're creating a new business model, extending Mimi's brand to be relevant and contemporary for today's guests," President and Chief Concept Officer Mark Mears told The Times. "It's a 'back to the future' thing. We know of no other casual dining restaurant that has this idea."
