John Montgomery returns as MAD Greens CEO amid menu overhaul

Salad Collective has rehired John Montgomery as CEO of MAD Greens, bringing back the former president as it revamps its menu.

Montgomery joined MAD Greens in 2008 and served as the company's president from 2016 to 2022. Most recently, he was president and chief financial officer of Illegal Pete's in Denver. He succeeds Darden Coors, who has been named chairman of Salad Collective and will remain involved in the company's long-term vision and growth strategy.

The leadership shift comes as MAD Greens rolls out its major menu overhaul, changing about 80% of its offerings. The brand partnered with The Culinary Edge to develop 20 items, including salads, warm bowls, wraps and sides.

"We took a hard look at where the category is going and built a menu that delivers more flavor, more variety and a more memorable experience, while still staying grounded in real, nutritious ingredients that guests can fully customize," Jeff DiSanto, the brand's director of culinary, said in a press release.

Founded in 2004, MAD Greens operates 23 company-owned restaurants, as well as licensed locations, and plans additional nontraditional growth in 2026 and beyond.

Salad Collective, based in Golden, Colorado, oversees MAD Greens as well as Snappy Salads and Tokyo Joe's. The company operates 60 locations across Colorado, Texas and Arizona.
