Fast casual takes off in Louisville

Courier Journal: The fast-casual scene is taking off in Louisville, Ky.
Former U.S. KFC president Don Doyle is the franchisee for all six Qdoba restaurants in the area. Doyle said the success can be linked to many factors, from an expanding American palate to the aging of the baby-boomer generation and the growth of the fast-casual segment.
"It's growing and it's popular because it's a level above traditional fast food in terms of both food quality and ambience," Doyle said.
