For coffee and bakery chains, capturing pumpkin-obsessed customers first, before rivals and before summer even ends, has become as much a part of the season as the spice itself.

Summer isn't over, but pumpkin spice season is already here. Panera Bread, The Coffee Bean & Tea Leaf and Starbucks are all rolling out fall menus in August, with some pumpkin offerings landing before Labor Day even arrives.
The trend reflects a broader pattern in the restaurant industry: pushing seasonal launches earlier each year to capture guests eager for autumn flavors, even while temperatures are still climbing in much of the country.
The Coffee Bean & Tea Leaf jumped ahead of the pack, giving loyalty members early access to its Pumpkin lineup starting Aug. 5. The seasonal drinks include a Pumpkin Iced Latte with Cream Cap, a Pumpkin Dry Iced Americano finished with a caramel swirl and chilled half and half, and a Pumpkin Extreme Ice Blended Drink, according to a company press release.
On Aug. 19, the chain will roll out a hojicha tea platform alongside an overhauled loyalty program. The low-roasted Japanese green tea will appear in an Iced Pumpkin Hojicha Latte, an Iced Hojicha Latte and a Hojicha Ice Blended Drink, each built on white chocolate powder and milk. Both the pumpkin and hojicha beverages will run through Nov. 3.
The revamped Coffee Bean Rewards program will also launch Aug. 19, expanding redemption options from four to more than eight and adding a new "Challenges" feature that lets members earn bonus points for trying new items. New sign-ups will get a free beverage.
Looking further ahead, the chain will bring back its Ghost and Goblin Iced Lattes — made with espresso or matcha, white chocolate powder and cookie pieces — from Sept. 16 through Oct. 31.

Panera Bread will debut its fall bakery and beverage lineup at bakery-cafes nationwide on Aug. 19, bringing back the Pumpkin Spice Latte alongside several new additions. The new drinks include a Pumpkin Spice Iced Coffee, made with the chain's dark roast coffee, pumpkin sauce, sweet cream cold foam and pumpkin spice crumbles, and a Pumpkin Spice Frozen Java, a blended coffee drink topped with whipped cream and the same spiced crumbles.
On the bakery side, Panera is introducing a Pumpkin Cinnamon Roll filled with cinnamon and pumpkin and topped with pumpkin spice icing, along with a Caramel Pumpkin Slice cake featuring brown sugar, vanilla and salted caramel swirls. The returning pumpkin-shaped shortbread cookie will also be back on shelves.
Scott Uehlein, vice president of culinary for Panera Bread, said the details set the fall lineup apart, from the icing and filling on the cinnamon roll to the toppings on the coffee beverages. The full menu will be available for dine-in, delivery, Rapid Pick-Up and drive-thru starting Aug. 19.
Starbucks is holding to a slightly later start date, with the Pumpkin Spice Latte returning Aug. 25 alongside an expanded pumpkin lineup. New for this year are the Iced Pumpkin Cream Shaken Espresso, Pumpkin Spice Chai and Iced Pumpkin Cream Matcha, joining returning drinks like the Pumpkin Cream Cold Brew and Pumpkin Spice Frappuccino.
Pecan flavors are also back, with a Pecan Cortado, Iced Pecan Crunch Latte and Pecan Crunch Latte hitting menus the same day. Starbucks is leaning into another flavor trend with two new banana bread-inspired drinks, the Iced Banana Bread Latte and Iced Banana Bread Chai, which will stick around beyond the fall season. Rounding out the beverage menu is the Chaider, a cider-inspired chai available hot or iced.
On the food side, Starbucks is adding a Chicken Bacon Protein Pocket with 20 grams of protein and a Hedgehog Cake Pop, alongside the returning Pumpkin Cream Cheese Muffin.
The chain is also releasing a PSL Society merchandise collection with new drinkware and apparel, and its fall flavors are already showing up in grocery aisles through coffees, creamers and ready-to-drink beverages.

Taken together, the three launches show fall creeping earlier into the calendar each year, with Coffee Bean & Tea Leaf's Aug. 5 debut arriving before many parts of the country have seen their first cool morning.
