Fazoli's CEO unveils new fast casual concept

CEO Carl Howard hopes to corner the market on Italian fast casual.

A new fast casual Italian concept is about to enter the market, but its owners aren't new to the fast casual scene. The new restaurant will open under the direction of Fazoli's CEO Carl Howard, who refers to it as Modern Italian but doesn't yet have an official name. The plan, Howard said, is to test it in a few markets and then close in on two main cities to start building the brand.

Howard chatted with FastCasual.com at the National Restaurant Association show about what type of food the upscale, fast casual restaurant will serve and why the chain is taking on this challenge.
