Can Pei Wei get on a roll with sushi?

Pei Wei is rolling out new sushi rolls next week in San Antonio and will test how well they do with consumers for six weeks.

Pei Wei is rolling out two new sushi rolls next week in San Antonio, testing how they do with consumers for six weeks. If customers like the new menu item, the chain may add it in other units, said Adam Schreier, director of Culinary Innovation.

"We're testing sushi because it's one of our largest growth categories, so it's something people are looking for now," he said.

Pei Wei's Sushi options include:

  • Dynamite Shrimp Roll: Mango California roll topped with dynamite shrimp, scallions, toasted sesame seeds and a light kung pao glaze
  • And Spicy Salmon and Cucumber Roll: Wild-caught salmon hand rolled with fresh cucumber and scallions with a sriracha aioli.

The sushi is hand rolled daily, cut to order and costs $3.79 for four pieces and $6.99 for eight pieces.

"Testing these two new sushi rolls gives us valuable guest feedback and a chance to test performance at a restaurant level," Schreier said.

In order for the chain to deem sushi popular enough to add to other units, Schreier said it will look at three pieces of criteria:

  1. Guest's feedback/perception.
  2. How well the dish performs on their menu.
  3. And if it takes appeal from other menu items.

"We are always looking at different opportunities to appeal to our guests and grow our menu offerings," Schreier said. "When we test an item and it proves successful we begin to explore opportunities for it to live somewhere within our menu."

The chain already serves several sushi options, including Kung Pao Shrimp Roll, Mango California Roll, Spicy Tuna Roll, Teriyaki Crunch Roll and Wasabi Crunch Roll.
