Sushi concept launches franchise effort

Austin, Texas-based How Do You Roll? has announced its new franchise effort. The chain has one unit open in Austin and a second scheduled to open there in March.
How Do You Roll? was founded by brothers Yuen and Peter Yung. Yuen, a certified public financial planner with a B.S. in business administration, serves as CEO. Peter serves as chief operations officer. Rob Zarco is the concept's director of franchise development.
The concept is based on the premise of customizable, made-to-order sushi rolls. A special rice mixer is used to prepare the rice while a maki machine presses the rice into its sushi-roll formation. A third machine then cuts the roll into 10 pieces.
Zarco said the average customer wait time is three minutes, from start to finish.
