Potbelly Sandwich shop is prepping the debut of two locations, one in Columbia, Missouri and the other in Little Rock, Arkansas, according to a press release.
Columbia native and Potbelly veteran Evan Thomas will open the first unit in Forum Development Group's Broadway Bluffs on July 25 and host an oven-warming fundraiser on July 24, donating the proceeds to the Food Bank for Central & Northeast Missouri.
"Opening our first location here is definitely a cause for celebration," Thomas said in the release. "Since I worked at my first Potbelly shop in Chicago, I couldn't wait to open my own location. Now, I'm ready to bring a great lunch experience and fun neighborhood vibe to families and students throughout Columbia."
The second location, in Little Rock, will open on August 8 and is owned by Ryan Hamra, who also owns a Potbelly location on University Avenue. He plans to open two more units in Little Rock, according to the release.
"Potbelly has really made a name for itself already in Little Rock," Chris Birkinshaw, senior director of domestic franchising for Potbelly Sandwich Shop, said in the release. "We couldn't be happier to see Ryan and his team continuing to grow the Potbelly brand and bring our good vibes to the neighborhood in downtown Little Rock."
