Pei Wei pioneer Brezinski to launch fast casual of Bengal Coast

Mark Brezinski, former Brinker International exec and development partner that brought Pei Wei Asian Diner to Dallas, is looking to develop his own Asian restaurant into a fast-casual brand, according to Pegasus News.
His restaurant, Bengal Coast, will be scaled down to a fast casual concept with a bar and wok-cooked foods, grilled items and wraps that are already popular at Bengal Coast.

'When I built Bengal Coast, I built it so that it had a fast casual component that works like a Pei-Wei,' says Pei-Wei co-founder Brezinski. 'It has its own entrance and local office people use it. We used that as a prototype for going forward, and getting back into fast casual arena with this style of food. So it'll be like Pei Wei but with more South Asian, Indian, Indonesian, and Thai food.'
Brezinski hopes to open by spring 2010 in Allen, an encalve of Dallas.
