Operators look harder at reducing waste, costs

The Courier-Journal (Louisville, Ky.): Restaurant owners are doing more to track food waste to cut costs in light of the recession.
Methods operators have implemented include:
- Tracking trash with software systems
- Making food in smaller batches
- Trying composting to cut down on trash-hauling costs
