Noodles & Co. founder involved with new eatery

Former Noodles & Co. founder and chief executive officer Aaron Kennedy has become the primary investor for new fast casual restaurant, Basil Flats. The restaurant is expected to open in Longmont, Colo., in a location formerly occupied by a Bear Rock Cafe.
Basil Flats will feature a wine bar and a regional microbrew selection. It is expected to open in mid- to late February, according to an article in theBoulder County Business Report.
Kennedy is opening the new restaurant with former Noodles chief operating officer Joe Serafin, who developed the concept. Kennedy also is a Basil Flats founding board member. He stepped down as the Noodles & Co. CEO in 2006.
