MAD Greens is 'mad about' local sourcing

In an effort to support local sourcing, Colorado-based MAD Greens has partnered with Boulder-based Olomomo Nut Company to create a new salad for its menu.

The Olomomo Salad — inspired by the nut company's all natural, healthy, artisan nuts — combines MAD Greens' ingredients, including baby greens, apples, feta cheese and dried cranberries, with Olomomo Cherry Vanilla Dream almonds.

"MAD Greens is always looking for new flavors and ingredients to come up with tasty combinations," said MAD Greens co-founder and CEO Marley Hodgson. "We have a history of working with other innovative companies to create new, interesting entrees for our menu. A key part of our mission in building the company has been to offer as much support as possible to local companies, and we actively seek out new ways to establish and maintain these relationships."

The Olomomo Salad first debuted on MAD Greens' menu in late 2012, as a limited-time offer. Due to the overwhelmingly positive response it is now a permanent fixture on the menu, Hodgson said.

"We were really excited when MAD Greens said they wanted to make a salad using our Cherry Vanilla Dream almonds," said Olomomo CEO Mark Owens. "Based on their culinary expertise and unique salads, we knew that the result would be amazing, and we weren't disappointed."

In addition to its partnership with Olomomo, last month MAD Greens announced a deal that names Longmont, Colo.-based Haystack Mountain Goat Cheese the company's exclusive supplier of goat cheese, affirming its support of Colorado-based companies and the use of fresh, quality ingredients, Hodgson said.
