Doc Green's makes 'fast casual' scene

Doc Green's concept is summarized in its slogan "healthy as you wanna be" and can be described as a don't-do-it-yourself version of the salad bar. The workers — I suppose you could call them "saladistas" — combine your choice of lettuce, five toppings and optional premium toppings and meat in a bowl, toss it all with dressing and hand it over.
