Cosi testing new menu

Cosi is testing a new menu in three Philadelphia locations. Michael Foley, Cosi's VP of brand strategy and innovation, served as primary architect of the new menu. Foley, who joined the Cosi team in October 2012 after a long history of culinary achievements, is an early winner of the James Beard Award and was named one of America's Top Chefs by Food & Wine magazine.

"Cosi is known for its hearth-baked flatbread, prepared fresh every 30 minutes in each one of our restaurants," said Foley. "My challenge was to develop a new lineup of sandwiches worthy of being served on our fantastic one-of-a-kind flatbread."

New sandwiches on the menu include:

  • Salmon Mexicali: Red peppers, corn & black bean relish, cilantro, field greens and chipotle ranch dressing.
  • Farmhouse Beef: Caramelized onions, field greens and Worcestershire mayo with Cosi light balsamic vinaigrette.
  • And the Adobo: Spicy chicken topped with fresh avocado, pico de gallo, cilantro, shredded lettuce and a touch of lime.

"Michael has crafted a creative selection of sandwiches and salads that are flavor-rich and showcase the level of creativity consumers expect from Cosi," said Stephen Edwards, Cosi's CEO and president. "We are excited to bring these new items to the people of Philadelphia."

The new sandwich and salad lineup will debut this week at three Cosi locations in Center City Philadelphia. Locations include 235 South 15th St., 325 Chestnut St., and 1128 Walnut St.
