Corner Bakery hires Noodles executive to lead franchising

DALLAS — Corner Bakery Cafe, a fast-casual bakery cafe owned by CBC Restaurant Corp., has hired P.J. Evans to lead the chain's franchise development efforts. Evans served as vice president of franchise development for Noodles & Company.
"The fast-casual segment is still the hottest segment in our industry," said Mike Hislop, chief executive of CBC Restaurant Corp. "There is a lot of room for a credible soup-sandwich-salad player, and we are looking forward to a future that includes growth both at the company-store level as well as through leveraging P.J.'s relationships in the industry." The company also said it will sell franchise territories and open more company-owned stores.
 
"We're looking at bringing in about three or four operators in the next 12 months to open 12 to 15 stores apiece," Evans told the Fort Worth Star Telegram. "Each year after that, we hope to increase to five or six operators, each developing between 10 and 20 stores."
 
The chain has 96 stores open.
