Squash on a pizza? This topping is a new winter menu item at Brixx Wood Fired Pizza, according to a company press release.
The roasted butternut squash pizza contains a sage pesto base and goat and mozzarella cheese as a savory counterpoint to the delicate sweetness of the squash. It's cooked in a wood-burning oven and finished with a drizzle of honey. It's available on traditional, whole wheat crust made in house daily, or gluten-free dough.
"We know our customers enjoy creative vegetarian recipes, and we wanted to add a fresh alternative for vegetarians," said Richard Shinault, executive chef. "Early response has been very positive. The same customers who enjoy our Pear and Gorgonzola or Pimento Cheese pizzas have loved this one."
The new pizza is a proprietary recipe, exclusive to Brixx, the release stated.
"When we make a pizza like this, we know from experience it will appeal to a significant niche audience," Shinault said. "But, those who who love it will make a special trip to Brixx for it. It becomes a signature pizza for us."
