Understanding your finances is the only way to keep a business going, but more than half of restaurant owners  — 52% of them —  said keeping down food costs was one of the most difficult parts of operating a restaurant, according to a survey conducted by Toast.

It doesn't have to be hard, however, according to Nicholas Rubright, a digital marketing specialist at Aptito, who developed an infographic to help restaurateurs calculate how much of their income is dedicated to ingredient costs.

"Anyone who operates or manages a restaurant or simply wants to have a better understanding of restaurant finances should understand the concept of food cost percentage," he said.

The infographic below outlines the formula, the steps to implement it and some tips on how to improve the metric.
