Sid Gauby started full time in the coffee world 14 years ago with a store front coffee shop in Fort Wayne, IN. After a few years he realized that being mobile and going to where people were rather than waiting for them to come to him held great potential. So 11 years ago he went all in with a mobile coffee shop. In 2014 he moved his business to Boise, ID. From the very beginning of the business, Slow River Coffee, he was looking for a way to power the equipment necessary to run his coffee shop on wheels with anything other than a generator.
Through a chance meeting with the owners of Joule Case he found folks that believed as he did that it would be possible to power everything with batteries and solar. Over a years time he worked with Joule Case to make sure that the power needs could be met to run everything for at least 8 hours. After running a variety of tests he finally pulled out the 12K generator that had been running his mobile coffee shop and went all in with batteries and solar. After four years of running exclusively on batteries and solar power he has become a leading voice for making the transition from gas powered food trucks to the digital power of batteries and solar working with Joule Case and continuing to run his coffee catering business.

Lightbox Ice Cream

Hannah Russell is the co-founder, alongside her husband Jason, of Lightbox Ice Cream located in Nashville, TN. Both south Georgia natives, Jason and Hannah relocated their family to Tennessee in 2020 to pursue entrepreneurship. For the majority of their careers, they have been in and around the food and hospitality industry. Jason is a classically trained professional chef having worked in hotels, restaurants and most recently as a private chef in Nashville. Hannah spent a lot of her career in grocery and food manufacturing, specializing in marketing and branding better-for-you packaged food products. While fresh-made peach ice cream was one of both their favorite memories growing up in the south, it wasn't until after leaving the formal-food world and moving to work on a dairy farm in Alabama, that they began to see ice cream in a whole new light. Their desire to build a family-founded business, career paths, passion for entrepreneurship, and professional experiences led to the creation of their own brand. One that represents their personalities and what they feel compelled to contribute to the world… more light, more lighthearted moments, and more opportunities to make more delightful memories! And what better way to do that than through ice cream?! Many divine things came together to build Lightbox including studying gelato in Italy, becoming "Ice Cream Certified" from Penn State University and finally a business that their whole family (3 kids + 2 dogs + 5 chickens) can sink their teeth into. Lightbox is their tangible way of pouring more light into the world!

Our formative years have been spent in public service. Adam – a retired Sergeant from the Long Beach Police Department in CA; and Kristi – a primary school teacher (both in the classroom and online) were brought up on a strong work ethic and service to others. We spent a lot of time looking for our place in the world and we realized that it was not to remain in Southern CA. We moved to Tennessee in the summer of 2022 and although we found our town, we continued to look for how we were going to live our new life. After a lot of prayer, hard work, and family support, White Shepherd Coffee was born. It is our goal is to bring about memories, meeting new people each day, finding time to gather and share our lives with one-another, and to serve our community in this new, exciting way. Grabbing a cup of coffee with a friend has always been one of our favorite things to do and we want our coffee to create memories for you too! We have invested our time to make your experience with White Shepherd Coffee something to look forward to again and again. White Shepherd Coffee is not only a Mobile Coffee Trailer, but an idea. Kris, a native of Los Gatos, CA has always felt that good food brings friends and family together. A great grandson of Croatian orchardists who settled in the Sunnyvale area in the early 1900's, he had always dreamed of owning his own restaurant. In 2012, after years working as a General Contractor, he opened the popular Gold Rush Eatery Gourmet Foodtruck. Gold Rush Eatery specialized in serving quality comfort food at an affordable price. His concept for the food truck was inspired by the famous Linda's Drive Thru, a popular eatery in Mountain View, California in the 60's, 70's and 80's. Gold Rush Eatery's signature menu item became The Gold Rush Burger, their version of Linda's "Parisian Burger", it boasts 1/2 lb Black Angus Beef Patty and a handcrafted San Francisco Sourdough bun. A dedicated parent-advocate, GRE began to partner with Santa Clara County Office of Education and their Workability Program, which provides youth with autism and other developmental disabilities an opportunity to improve on their employable job skills. After finding success building a local following, Gold Rush Eatery opened its "brick and mortar" restaurant at the Sunken Gardens Golf Course in 2016. Gold Rush Eatery quickly became a popular spot for local residents of Sunnyvale for special events and grew a following with craft beer enthusiasts as well, serving up 20 beers on draft. He continues his work with SCCOE Workability Program and his advocacy work in the local community.
