Paul Barron and Cherryh Cansler of "Fast Casual Nation" sat down with James and Joanna Windon, the couple behind Buena Papa, to discuss their innovative loaded fries concept.

The Colombian-inspired eatery elevates the humble fry with a global twist, offering hand-cut potatoes piled high with customers' choices of meats, sauces, cheeses and vegetables. The Windons recounted their journey from a small Raleigh food hall to securing a $400,000 deal on "Shark Tank" with Robert Herjavec and addressed the challenge of educating consumers that fries can be a substantial meal.

Buena Papa's Chipotle-style service, unique packaging and focus on fresh ingredients have fueled its widespread popularity, leading to the company's plan to grow via franchising.
