Florida-based Zaza New Cuban Diner has hired Victor Ganoe as SVP of Operations and Virginia Allen as director of Finance, according to a company press release.
In his role, Ganoe will oversee the five-unit fast casual's operations as well as operations for sister brands, Central Kitchen, Café Zaza. Most recently, Ganoe served as regional director for Firebirds Wood Fired Grill and oversaw the Southeast region including Florida, Georgia, Tennessee, Mississippi and Alabama markets.

Allen, who will lead analysis and financial support across all area of the business, will partner with leadership to monitor key performance metrics, analyze the company's financial results and identify business trends.
Prior to joining Zaza New Cuban Diner, Allen was with McDirmit Davis CPA, where she specialized in corporate tax and financial consulting with an emphasis in the food and beverage industry.
"These roles will help drive development and operational excellence while continuing to focus on our culture," Ruben Perez, co-founder and owner of Zaza New Cuban Diner, said in the release.
Zaza plans to open 25 locations in the next five years while growing Café Zaza,
Originally founded in 1981 as a third-generation family restaurant business, the Perez family, led by Ruben Perez, opened the Zaza New Cuban Diner restaurant concept in 2013.
