Innovation is a big part of most fast casual menus, and Washington D.C.-based Fresh Baguette is no exception. It created two salads, but the twist is that they come in reusable glass containers. Guests may choose between the Niçoise and Buckwheat Salad — layered with buckwheat, tuna, egg, green beans, cherry tomatoes, black olives and arugula — or the Autumn Chopped Salad, which has butternut squash, green beans, roasted pears, feta cheese, arugula and sunflower seeds, according to a company press release.

The chain has also created four sandwiches called Cro'gels, made from Fresh Baguette's dough baked into the shape of a bagel and sprinkled with Everything Bagel seasoning. The sandwich comes in four varieties:.

  2. The Norwegian, filled with salmon and cream cheese.
  3. The Breakfast Le Sud made with an omelet, tomatoes, avocado and bacon.
  4. The Deluxe TM Pesto with mozzarella, fresh tomatoes and pesto.

"Our guests love our handcrafted croissants, so we took our signature item and made it bagel shaped to create the exciting Cro'gel" Florent De Felcourt, CEO of Fresh Baguette, said in the release. "In addition, the salads are a logical choice given our commitment to flavor and ingredients but served with a twist."

Founded by former French Naval officer Florent De Felcourt in 2013 in Bethesda, Maryland, the bakery has three units in Bethesda, Rockville and Georgetown with a wholesale business.
