Viva Chicken bottling sauces

Since opening its first location in 2013, Viva Chicken has been serving hot, fresh chicken highlighted by Pollo a la Brasa — a charcoal-fire-roasted chicken and a staple of Peruvian street food. Over the past eight years, however, the chain has also gained a following for its three sauces and has made them them available in 8-ounce bottles, according to a company press release. They include:

  • Aji Amarillo (Mild, Yellow) — sweet on the front end, with a mild spice on the back end.
  • Huacatay (Medium, Green) — a mixture of Peruvian black mint, jalapenos and fresh cilantro.
  • Rocoto (Hot, Red) — Creamy with a distinctive flavor and delayed kick, it's made from Rocoto, ne of Peru's hottest peppers.

The Aji Amarillo pepper, the base for Viva's Aji Amarillo sauce, is used in most Peruvian cooking. Viva sources its Aji Amarillo peppers from a family-owned farm in Peru, which co-founder Chef Bruno Macchiavello often visits to check in with the farmers and the peppers that supply flavors Viva fans love, according to the release.

Bottles of Viva Chicken sauces are available for purchase at all Viva locations, the Viva Chicken app or online at VivaChicken.com. Each bottle is $5.50.
