Vegas bound: True Food Kitchen (and bar) hitting The Strip

The Forum Shops at Caesars Palace will soon be home to True Food Kitchen, a Phoenix-based fast casual restaurant that serves healthy food. The chain, which is also opening a first-of-its-kind "True Bar" adjacent to the restaurant in the Reflecting Pool area, will open its doors by spring 2020, on the Street Level of The Forum Shops near the iconic Spiral Escalator, according to a company press release.

"We are thrilled to be opening the first health-focused concept on the Las Vegas Strip. While Vegas is renowned for indulgent dining, we're excited to allow even more guests the opportunity to experience a better way of eating," said Shannon Keller, CMO of True Food Kitchen. "The Forum Shops at Caesars Palace is a world-renowned destination and will enable us to bring our seasonal fare to both Las Vegas residents and guests who travel from all around the world to experience this incredible shopping center."

The restaurant and bar will make up about 11,314 square feet of combined indoor and patio dining space to accommodate more than 315 guests. The space takes inspiration from an industrial warehouse overtaken by greenery and will feature design elements of natural wood and stone, industrial-style lighting, steel-framed glass doors, and a greenhouse-style ceiling with live plants throughout the space, according to the release.

The restaurant will also feature two interior private dining rooms with flexible configurations for up to 72 guests. The first private dining room offers a secluded, intimate space inspired by a tropical beach hut, with wood shutters and slat walls along with backlit window features to inspire a sunlit room. The second private dining room is large enough to be divided into two spaces and showcases a trellis ceiling with hanging plants and natural stone mosaic tiles to evoke the feeling of a garden terrace.

The True Bar will sit atop the nearby Reflecting Pool and will offer guests handcrafted cocktails such as the signature Citrus Skinny Margarita made with citrus juice and organic tequila, along with beer and a selection of sustainable, organic and bio-dynamic wines, according to the release. It will also serve freshly pressed juices, organic teas and natural refreshers, such as the Medicine Man, Hangover Rx and Kale Aid.

True Food Kitchen's menu rotates seasonally to let guests experience produce at the peak of its freshness and flavor. Signature dishes include the Spaghetti Squash Casserole, Organic Tuscan Kale Salad, Grilled Fish & Grass-fed Steak Tacos, the Inside Out Quinoa Burger and more.

Founded in 2008, True Food Kitchen has 28 locations in 12 states including Arizona, California, Colorado, Florida, Illinois, Georgia, Maryland, Missouri, Pennsylvania, Tennessee, Texas, and Virginia.
