SkinnyFATS founder Reed Allen Slobusky is teaming up with Las Vegas-based Chef Marc Marrone and Todd Lunger — who co-own Graffiti Hospitality — to add concepts to HallPass, Slobusky's Utah-based food hall, according to a company press release.
Graffiti Hospitality's Graffiti Bao, a fast casual Chinese restaurant with locations at T-Mobile Arena and the Raiders' stadium in Las Vegas, will take one spot at the hall, and Marrone, who is now a chef and partner with HallPass, will helm a new concept called Hibachican, a dual hibachi concept featuring a balance of Japanese teppanyaki, tartare and small plates alongside Mexican tacos, aguachiles and house-made chips, guacamole and assorted salsas.
Next door, guests may satisfy their sweet tooth at Waffadopolis, a dessert shop based in Salt Lake City.
"SkinnyFATS was built on constant evolution of the menu, and HallPass essentially functions as a massive R&D facility for that," Slobusky said in the release. "Having Marc at the helm will bring HallPass to its full potential in both creation and execution."
Graffiti Bao, Hibachican and Waffadopolis will join five other eateries and bars at HallPass, including SkinnyFATS and Beer Zombies Draft Room & Beer Garden.
"I'm excited to partner with Reed at HallPass and bring Graffiti Bao to Salt Lake City, Marrone said in the release. "HallPass has already established itself as a staple in Salt Lake City, and what we have rolling out will further solidify that. Having seven different kitchens to play around with isn't so bad either."
Established in 2013 in Las Vegas, SkinnyFATS offers a two-sided menu featuring "Happy indulgences" and "Healthy alternatives." It has six locations in Las Vegas and Dallas.
