Genghis Grill is conquering new markets with its build-your-own stir fry concept.In 2011, 27 new locations opened and the company is on track to open 30 more in 2012. The brand's quest for a healthy image is also gaining momentum. The second year of its Health Kwest campaign is underway, with dozens of contestants vying for $10,000 by pledging to eat Genghis Grill's healthier meal options once daily and posting their progress online. Last year's Health Kwest winner, Brandon Sanders of Murfreesboro, Tenn., lost 60 pounds in 90 days.
