Todd Stottlemyre's poke brand readies for national expansion

Koibito Poke, an Arizona-based concept co-founded by former MLB pitcher Todd Stottlemyre, has opened its newest location in Scottsdale debuting a new design that will serve as the standard model for the chain.

Focused on efficiency and simplicity, the model provides easier kitchen movement, a more open floor plan and large floor-to-ceiling windows that create a modern and inviting atmosphere for its customers, according to a company press release.

The build-your-own Hawaiian poke bowl concept has four locations and plans to enter 12 markets over the next year by offering a lucrative package to potential franchisees and area developers, including royalties and benefits.

The team has already secured interest for additional locations throughout Arizona and in states including Texas, Nevada, North Carolina, South Carolina, Illinois, Massachusetts, Connecticut, Washington, Rhode Island and Florida.
