The Hummus & Pita Co signs Jersey deal

The Hummus & Pita Co., a NYC-based Mediterranean fast casual concept, is expanding to New Jersey this year. The company has signed a five-location deal with Kaushal Shah and Rishi Parikh to open in Holmdel, Freehold, Old Bridge, Woodbridge and East Brunswick, according to a company press release.
 
Beyond New Jersey, The Hummus & Pita Co. is poised for major expansion in 2018. Besides its NYC locations (Chelsea, Tribeca, Hell’s Kitchen), it has committed to a multi-unit deal in Connecticut and Denver, Colorado, with more in the works in the Tristate area and beyond, according to the release.

Impressive unit economics (averaging at $1,200 in sales per square foot), coupled with high consumer demand, prove the concept is well-positioned to launch in additional markets, said Dave Pesso, owner and founder. He opened the chain in 2011.
