Smokey Bones embraces fast casual model via ghost kitchen

Smokey Bones has partnered with Kitchen United to open a ghost kitchen Chicago offering delivery-only. Barbecue fans may order through Grubhub, Uber Eats, DoorDash and ezCater. In July, those seeking wings or burgers may choose from The Burger Experience and The Wing Experience, both virtual sub-brands, according to a company press release.

"Leveraging technology to increase the availability of Smokey Bones is guided by our 'anytime/anywhere' off-premise vision," CEO James O'Reilly said in the release. "That we can open a new urban point of distribution during an economic downturn speaks to our confidence in this strategy and the strength of our partnership with Kitchen United."

Smokey Bones pitmasters and cooks will prep, cook and package the food, which will then be transferred to Kitchen United employees who give it to third-party delivery services. Guests may also order online at smokeybones.com or kitchenunited.com for curbside service from the kitchen at 831 N. Sedgwick Street.

Smokey Bones already has 60 full-service restaurants in 16 states.
