Slim Chickens growing Midwest footprint with 14-unit deal

Arkansas-based Slim Chickens has inked a deal to bring 14 locations to Kansas and Missouri. Spearheading the development is Jeff McCoy of AP Restaurant Group, who owns eight Slim Chickens locations in Oklahoma with six more on the way and six locations in Kansas City. A son of a Pizza Hut franchisee, several characters of the Slim Chickens brand stood out to him as an emerging concept.

"I knew Slim Chickens was a concept growing rapidly. From my perspective, this allowed me the opportunity to have a collaborative franchisee/franchisor relationship from day one," McCoy said in a company press release. "Given that the brand is in growth mode, I had access to the leadership team and they were able to support my vision and growth goals. While Slim Chickens is continuing to expand, the brand offers top-notch operational support for multi-unit owners and motivated entrepreneurs who are creative and have a mindset to grow. Slim Chickens is the ideal concept for those who want to be a part of the creative experience and work hand-in-hand with a seasoned leadership team. The better-chicken brand has opened over 250 locations across the United States and the United Kingdom.

Slim Chickens has experienced a 60% restaurant growth over the last two years, equaling over 250 opened locations today.
