Slim Chickens continues Kentucky expansion

Slim Chickens is continuing its Kentucky expansion when it opens Saturday at 2897 Richmond Road in Lexington under the direction of Houchens Food Group, a subsidiary of Houchens Industries, a 107-year-old company that is one of the nation's largest 100% employee-owned companies. Houchens' portfolio spans 13 industries including grocery, convenience stores, construction and over 50 restaurants. It also owns several Slim Chickens locations.
"Our freshly made southern dishes and homemade recipes create loyal guests who feel good about the food they're eating and we're proud to be able to grow our loyal fan base into the Lexington market," Slim Chickens Chief Operating Officer Sam Rothschild said in a company press release.
Slim Chickens opened in 2003 in Fayetteville, Arkansas, and has over 250 locations.
