Slapfish is prepping to hit Chicago later this month for a one-night pop-up event.
Chef Andrew Gruel, founder of the Southern California chain, will head into Chicago on May 19 for a pop-up at the Ampersand space in the Kinmont Restaurant. Gruel, who calls himself an "eco-seafood" chef, said in a release his goal is to "make sustainable seafood approachable in all the biggest food cities outside of southern California, including Chicago."
According to the release, the menu will offer "a sneak peak of what's to come in Chicago over the next few years," and includes items like clam chowder fries, a surf n’ turf burger and lobster roll tacos. The emphasis is sustainability, according to Gruel.
"Sustainability is about keeping the human race healthy without destroying the environment," he said.
Gruel's restaurants center menus around fresh, sustainable fish, which has been responsibly sourced. Slapfish works with the Aquarium of the Pacific and seafood suppliers to ensure they're using the most current data on over-fishing and other topics related to sustainable fish farming and harvesting practices.
