Brazilian steakhouse launches as fast casual concept in Orange County

The fast casual service model does not come to mind when thinking about Brazilian steakhouses, but Silva's Fresh Eatery + Churrascaria is hoping to change that. The international bistro, created by first-time restaurateur Rick Silva as a way to pay homage to his mother's Brazilian cooking, is now open in Orange County's South Coast Metro in Santa Ana. 

"Our recipes are authentic, fresh and put together using the best organic, locally grown vegetables and highest quality proteins," General Manager Alex Ferreira, said in a company press release. "This is a family operated business, and the care we put into every detail of the restaurant can be seen and tasted by our customers." 

Chef John Vega, formerly of Roy's Newport Beach, has created the menu that includes eclectic Brazilian dishes, appetizers and desserts, but customers can also have an All You Can Eat Feast for $22.95, which includes a customized meal from the Chef's Table. Menu favorites include top sirloin (Picanha), Skirt Steak, Feijoada (Black Bean Stew), Fresh Broccoli and Cauliflower, Butternut squash, Brazilian fried rice (Biro-Biro) and vegetarian plate options. Brazilian appetizers include Chicken Croquettes (Coxinha de Frango), Prosciutto & Cheese Roll and Kibbeh.

"The restaurant brings together elements of casual decor, comfortable seating, a sleek bar, and an elevated, yet unpretentious environment that is perfect for date night, large groups or for simply taking food to go," Ferreira said.

Silva's uses locally sourced meats and vegetables, promotes daily chef's specials and happy hour offerings at the bar, which includes wine, beer and signature Brazilian-influenced and mixologist created cocktails.
