Blue C Sushi, a Japanese fast casual chain, is expanding into California. Marking its first location outside of Seattle, Blue C Sushi's newest restaurant will open at The Dome Entertainment Center at 6374 Sunset Blvd. in the heart of Hollywood.
"Hollywood is the perfect fit for our first California location," said Blue C Sushi's President Richard Dalton. "The entertainment capital of the world will allow Blue C Sushi to build on our reputation for creating a unique, interactive dining experience. At the same time, we are laying the groundwork for further expansion of the concept."
With six locations in Seattle, Blue C Sushi is an innovative sushi concept where Japanese tradition and technique intersects with American inventiveness and genuine hospitality, Dalton said. Inspired by the Tokyo subway system, Blue C Sushi's unique experience — small plates of carefully sourced ingredients served via a revolving conveyer belt — is on the cutting edge of interactive sushi dining. Through proprietary RFID technology, 12 feet of video walls, a musical playlist created by Gray V, as well as culinary offerings from Jeffrey Lunak, former corporate chef for "Iron Chef" Morimoto, Blue C Sushi's mission is to serve high-quality, yet approachable offerings, that rival top sushi restaurants.
"We've assembled a very dynamic group of chefs who are dedicated to creating something truly unique and we're excited to bring this to Southern California," said Blue C Sushi's Vice President-Culinary Jeffrey Lunak. "Items like the Wasabi Albacore Caesar Salad are different, yet familiar, while Smoked Salmon Takoyaki may appeal to a more traditional Japanese palate."
