Scratch Kitchen, a sustainable takeout and delivery brand in Boulder, Colorado, has implemented UV-C light technology to prevent the spread of COVID-19. At the end of each day, the restaurant uses R-Zero's UV-C system, Arc, to disinfect the establishment, Jake Malanoski, founder of Scratch Kitchen, said in a company press release.

Even as our communities are vaccinated against COVID-19, Arc will enable us to continue providing the highest level of safety throughout our kitchen."
UV-C light is a disinfection technology known to kill over 99.99% of all pathogens, including the virus that causes COVID-19, according to the release.
With the touch of a button, R-Zero's Arc can disinfect air and surfaces in a 1,000-square-foot in 7 minutes, cutting labor time for cleaning staff by 20-30%. Arc also reduces the need to expose employees and patrons to harmful chemical disinfectants, and is safe to use around food, furniture and upholstery. Additionally, Arc features smart-device connectivity that provides Scratch Kitchen with an auditable trail of disinfection activity.
The introduction of Arc comes right on the heels of Scratch Kitchen launching its newest concept, Little Fish, a sushi brand focused on quality, technique and transparency.
