Rush Bowls making Minnesota debut

Rush Bowls, a Colorado-based concept known for its healthy meals-in-a-bowl, is opening its first Minnesota location in mid-March. Under the direction of the husband-and-wife duo, John and Libby Hitt, the store, 13005 Ridgedale Dr., is one of four planned for the greater Minneapolis suburbs.

"Rush Bowls, as a brand, has always impressed us with the variety of healthy options they offer on their menu," John Hitt said in a company press release. "Our bowls are blended on-site and made to order while catering to the specific needs of our guests. Whether that means gluten-free, organic or lactose-free, we have something for everyone to enjoy."

Rush Bowls was founded in 2004 and has 35 restaurants in 19 states with over 100 locations in various stages of development.
