Rubio's Coastal Grill bringing cauliflower rice to menu

Rubio's Coastal Grill will begin offering cauliflower rice at all of its 150 locations on July 14, according to a company press release.

Cauli rice will be available for an additional $2 as a substitute for traditional rice in Rubio's bowls and burritos or as a side with an entrée or kids meal.

"Rubio's guests are incredibly food savvy and appreciate being able to order meals customized to their wellness goals," Rubio's co-founder Ralph Rubio said in the release. "When Cauli Rice is substituted in place of rice in our California Bowl, the Cauli Rice is just 130 calories with seven net carbs per serving. It's an easy swap that tastes delicious with great health benefits."

Rubio's cauli rice is made from riced cauliflower cooked with fresh cilantro, lime juice, lemongrass and sea salt. Cauli rice is a nutrient-dense food that contains antioxidants, such as vitamins A and C, fiber, potassium and calcium. Rubio's, founded in 1983 in San Diego, operates more than 150 restaurants in California, Arizona and Nevada. Rubio's was ranked as one of Fast Casual's "Top 50 Movers and Shakers" as well as one of the top five most loved fast casual chains by Foodable Labs and Digital CoCo.
