Restaurant veteran tapped as Dig Inn’s first COO

Dig Inn has hired on restaurant veteran Irene Cook as its first-ever COO.

Cook is joining the leadership team after 12 years of operational leadership at Panera, according to a release.

Dig Inn plans to further expand into New York City and Boston markets, with five new stores by 2017.
