Proposition Chicken adding 2 locations by year's end

Founded nearly eight years ago in San Francisco, Proposition Chicken is adding two locations next month in the Bay Area. Its flagship location will move to Laurel Village next week in San Francisco's Laurel Heights neighborhood, and another location will open in Terminal 3 (United) at the San Francisco airport this winter, according to a company press release.

Prop C offers a choose-your-own dining experience using chicken only from Mary's Free Range Organic Chicken. Customers choose their chicken — fried, flipped (slow-roasted rotisserie) or fake (crispy BBQ tofu) — as well as their style — sandwich, salad or entrée. The menu also includes wings, chicken strips, brown sugar Brussels sprouts, bone broth and matzo ball soup.

Prop C has developed a complex culinary process more commonly found at formal dining establishments, according to the release. Starting with free-range, air-chilled chickens from Mary's, which never ever contain preservatives or antibiotics, each whole bird is broken down and brined for 24 hours. After dredging, the chicken is twice-fried — first at a low temperature then again at a higher degree — creating a crispy, delicate and flaky crust.

The rotisserie chicken is marinated overnight before a slow roasting process begins. All sauces, spice blends, marinades, and dressings are made in-house, and the bones from the chickens are used to make bone broth and matzo ball soup. Additionally, Prop C offers gluten-free and vegetarian options including Celiac-friendly, gluten-free fried chicken.

Proposition Chicken has two brick-and-mortar restaurants serving the full menu in San Francisco and Oakland and is also available for pick-up and delivery with a limited menu at Menlo Park, San Jose, Lafayette, and Cupertino. All packaging is 100% compostable or recyclable, according to the release.
