Potbelly Corporation, a fast casual sandwich shop known for its sandwiches, salads, soups and cookies, is opening this week in Cary, North Carolina, according to a company press release.

Franchisees Mohit Kishore and Tulshi Bhakar opened the location at Parkside Town Commons, an open-air facility and entertainment center at the intersection of Highway 55 and Interstate 540. Delivery, order-ahead, catering and the Potbelly Perks reward program are available through Potbelly.com or the Potbelly app.

"I know Mohit and Tulshi are the perfect pair to continue our expansion thanks to their vast experience in the industry and the success they have had with their previous locations," Potbelly CEO Bob Wright said in the release. "They have a proven track record with Potbelly, and I'm confident that this location will win over the hearts and tastebuds of Cary residents."

The location will be the eighth Potbelly in North Carolina, and it joins Kishore and Bhakar's existing Triangle locations in Morrisville and Durham. The duo started with Potbelly in 2017 and plans to open another shop in the area as part of a multi-unit franchise agreement, according to the release. The partners have more than 20 years of experience in the restaurant industry.

"I live in Cary, so this is an opening I've been looking forward to for a long time," Kishore said. "Our first two shops have really become part of the community, and we are positive that our new location will follow that path."

Potbelly was founded in Chicago in 1977 and has expanded to more than 400 company-owned shops and over 40 franchisee-operated locations in the U.S.
