Potbelly Sandwich Works plans to open 50 locations in 2026, a significant expansion that will push the chain past the 500-store milestone as it pursues a long-term goal of 2,000 units nationwide.
The Chicago-based sandwich chain announced Monday that it is closing 2025 with 30 shop openings and a development pipeline totaling 387 commitments. The growth follows the company's acquisition in October by RaceTrac, Inc., a family owned convenience store operator.
Potbelly reported strong performance metrics heading into the new year, including average unit volumes of $1.3 million. The company has also seen a shift in consumer behavior, with more than 40% of orders now placed digitally or through the Potbelly Perks loyalty app.
"Potbelly's momentum is undeniable," Jennifer Durham, senior vice president of franchising and development, said in a company press release. "Our development pipeline is strong, our franchisee interest is increasing, and I'm energized to lead the next chapter of growth as we expand Potbelly's presence in key markets nationwide."
Franchise development remains a central pillar of the company's strategy. In 2025, franchise owners signed 12 Shop Development Area Agreements representing 125 new shop commitments. According to the company, approximately 70% of new shop growth is being driven by existing franchise owners expanding their portfolios.
