Perkins' fast casual concept opening 46 New Jersey locations

Perkins American Food Co. is opening 46 units of its fast casual brand, Perkins Griddle & Go, in New Jersey. The first will open in October 2025 adjacent to the upcomingNetflix Studios campus in Fort Monmouth, often referred to as "The Hollywood of the East." New Jersey will host the largest number of units for the brand.

"Franchisees across the country have shown strong interest in Griddle & Go," Peter Ortiz, chief development officer for Ascent Hospitality Management, the parent company of Perkins American Food Co., said in a company press release. "We signed an impressive number of units in New Jersey, which will be home to our flagship U.S. restaurant. We are eager to bring this modern take on Perkins to more markets — new and existing — with the support of our franchise partners."

Perkins Griddle & Go is designed for fast-paced consumers, offering a streamlined cafe experience within a compact footprint. The concept features modern digital menus and self-order kiosks for quick meals, alongside a cozy cafe-style dining area for those with more time.

Beyond New Jersey, Perkins has also secured development deals for Griddle & Go locations in California, Texas and Canada, positioning the concept for broader national and international reach.

Perkins Griddle & Go offers classic Perkins favorites, including griddle items, pies and Mammoth Muffins, alongside new additions like breakfast sandwiches and avocado toast.
