George Tenedios — the founder of Manhattan-based fresh&co — and Spiro Kokkosis, the owner of New York's Majestic Deli, Premier Deli and The Times Eatery, have created The Gyro Project, an elevated Greek fast casual concept. The first location opened earlier this month at 2151 Lemoine Ave., in Fort Lee, New Jersey and features authentic Greek street food with a modern twist.

Customers can order house-stacked gyros, souvlaki, bowls, salads, rotisserie meats and poultry all using clean ingredients, with several vegan options as well. Some other call-out dishes include sesame-crusted baked feta, honey-drizzled saganaki, croquettes, and Greek-style lamb chops, according to a company press release.

The concept also features an extensive "agora" or marketplace for small-batch craft Greek imported packaged items, such as infused vinegar, high-quality olive oils, house-blended custom spices and rubs, pre-packaged snacks and small-batch dips and sauces.
